Sustainable Beef deploys AI welfare monitoring 

Officials with Sustainable Beef LLC have partnered with Australia-based AI firm Lumachain to deploy a computer-vision animal welfare monitoring system at its new Nebraska beef plant, according to Meat+Poultry. 

The platform provides real-time oversight of welfare-critical events, replacing periodic manual audits that rely on small, random samples. As reported by Meat+Poultry, the system delivers continuous monitoring of every animal using in-plant cameras and AI-driven analysis, marking the first large-scale deployment of its kind by a beef processor. The technology tracks key indicators such as stunning effectiveness, electric prod use, slips, falls and pen density. Sustainable Beef said the system aligns with industry standards and was independently validated by researchers at Colorado State University.
