Beef Bits Brief: Aleph Farms creates cell-based “ribeye”

Israel-based Aleph Farms and the Israel Institute of Technology have created what they are calling the “world’s first slaughter-free ribeye steak.”

The groups say the lab-grown product contains real muscle, fat and a “vascular-like” system similar to a real beef ribeye. The product was made by using 3D bioprinting technology and cells from live cattle.

Aleph Farms first released their lab-grown steak in 2018, which did not use bioprinting, but now the company says they can use the technology to create any type of steak in the lab. The technology works by printing living cells that are then incubated to grow and mimic the texture of a real steak.

“With the realization of this milestone, we have broken the barriers to introducing new levels of variety into the cultivated meat cuts we can now produce,” said Shulamit Levenberg, Aleph’s cofounder and chief scientific adviser.

“As we look into the future of 3D bioprinting, the opportunities are endless.” Didier Toubia, cofounder and CEO of Aleph Farms added, “Additional meat designs will drive a larger impact in the mid and long term. This milestone, for me, marks a major leap in fulfilling our vision of leading a global food system transition toward a more sustainable, equitable and secure world.”
