A couple of unexpected bonuses were accorded members of the Southern California-Arizona Beef Cattle Tour recently. One was the oatmeal icebox cookies served by Mrs. Cora Riggs at her Dos Cabezas, Ariz., ranch. The other was hush puppies served by the Dale Bumsteads at Tal-wi-wi in the Pines, Alpine, Ariz.
As a special service for readers who were unable to attend the tour, WLJ herewith passes on the recipes:
Oatmeal Ice Box Cookies – Mrs. Cora Riggs
1 cup shortening (butter and crisco)
1 cup brown sugar
1 cup white sugar
3 eggs
1 1/2 cups flour
3 cups Quick Quaker Oats
1 tsp. soda
1 tsp. vanilla
1 cup chopped nuts
Mix in order given. Make into rolls and store in refrigerator. Slice thin and bake in moderate oven.
Hush Puppies – The Dale Bumsteads
2 cups corn meal
1 tblspn. flour
2 tsp. baking powder
1 tsp. salt
1 egg beaten
6 tblspns. chopped onions
2 cups milk
Mix in order given. (If not thick enough, add a little more meal.) Drop by teaspoonful into hot fat. Cook until golden brown. Drain and serve hot with fish.
