Study on beef consumption and brain health

While freezing meat might not impact how it tastes

A new study at the University of Nebraska-Lincoln, led by neuroscientist Dr. Aron Barbey and graduate student Jisheng Wu, is exploring the potential connection between beef consumption and brain health.

Beginning this fall, the study will use modern scientific methods to accurately measure nutrient consumption and assess brain function, marking a significant advancement in understanding the relationship between diet and cognitive health. Collaborating with the Department of Animal Science and Loeffel Meat Lab, the study will track over 200 college students through a 12-week dietary intervention that varies beef intake. Utilizing advanced brain imaging and nutrient biomarker analysis, researchers aim to uncover how different levels of beef consumption impact brain health.

The Nebraska Beef Council, Texas Beef Council and National Cattlemen’s Beef Association, a contractor to the Beef Checkoff, are supporting the research.
