Report: Beef better than soy for muscles

Color differences in ground meat is due to changes in the natural color pigments

New research from the University of Arkansas for Medical Sciences shows that 100% ground beef is more effective than soy-based alternatives for muscle protein synthesis.

The study, published in the American Journal of Clinical Nutrition, found that double the amount of soy-based protein is required to achieve the same muscle-building effects as ground beef.

Researchers compared the anabolic response—muscle-building ability—of 24 healthy adults aged 18-40 after consuming one 4-ounce beef patty, one 4-ounce soy-based patty or two 4-ounce soy-based patties.
