More than 2,500 runners participated in the 39th annual Road-O-Cross Race at Living History Farms in Urbandale, IA, on Nov. 18. At the conclusion of the 7-mile race, participants enjoyed warm beef stew provided and served by the Iowa Beef Industry Council (IBIC). “Beef is an excellent source of protein, which is especially important for muscle recovery after physical activities such as the Road-O-Cross race,” said Rochelle Gilman, director of nutrition and health promotions for the IBIC. The beef checkoff provided about 500 pounds of beef used in the beef stew prepared by the Iowa Machine Shed restaurant. Race participants had the opportunity to engage with local cattle farmers and their families as they served the beef stew.
