Brisket values are especially strong right now

Japanese Wagyu brisket is now on the market for an exclusive amount of time.

Crowd Cow, the online meat distributor that claims to deliver “the very best craft meat from the farm to your table,” has sourced a limited number of Wagyu brisket products from Kagoshima farms in Japan.

The cuts of brisket differ from American-style Wagyu in that they are much larger—the Japanese “seam cut” at natural divisions of the muscle, so the resulting product is much heavier, weighing about 30 pounds.

Prices are larger than the American standard as well: The beef runs about $45/lb. for a half of brisket.
