According to a report in the Roswell Daily Record, USA Beef Packing, LLC will soon also process bison. WLJ confirmed the report with an employee who answered the phone at the packing company.
The company began operating near Roswell about a year ago and is the only beef slaughter and meat processing plant in southeast New Mexico. It has signed contracts for 2019 with a family ranching operation near Amarillo, TX, to supply the bison. The company’s main focus will continue to be beef, but it will process bison once a week with a goal of 150 to 200 animals a month.
