Beef Bits Brief: New meat science building

The University of Wisconsin (UW), Madison announced the completion of their 67,540-square-foot Meat Science and Animal Biologics Discovery (MSABD) building.

The new building provides state-of-the-art teaching, research and outreach capabilities. It houses a USDA-inspected meat and poultry processing facility and a Biosafety Level 2 processing and laboratory facility for food safety research. The building also features Bucky’s Varsity Meats retail store. The MSABD building and program help support the state and its meat industry.

According to UW Madison, there are 241 official meat establishments and 51 custom exempt meat establishments operating in Wisconsin with total annual sales of $8.6 billion.
