UNL’s meat shop set to reopen

The Loeffel Meat Shoppe at the University of Nebraska-Lincoln (UNL) will host its grand re-opening celebration on May 3.

During the event, attendees can enjoy recipe samples and learn about food safety, knife care and home kitchen knife usage through demonstrations by Nebraska Extension. The event will also feature store sales and giveaways.

The shop, a USDA-inspected retail meat sales operation, offers a wide selection of cuts, including beef, pork, lamb, goat, smoked and sliced sausages, brats, naturally cased wieners, and various types of ready-to-eat snack sticks.

Proceeds from the meat shop contribute to covering expenses related to the academic programs in animal science. Livestock are harvested and processed for sale at the Loeffel Meat Laboratory, where Nebraska students in the department provide assistance. Students not only gain practical experience in processing, packaging and selling products but also participate in the development of new items for the shop, such as the jalapeño popper bratwurst, which received national recognition as a two-time award winner.

The shop and laboratory bear the name of Professor William J. Loeffel, UNL’s first meat scientist. Loeffel, who taught at the university from 1919-62 and chaired the department from 1938-59, is celebrated as a pioneering figure in Nebraska’s meat industry.
