Washington State University (WSU) will debut its mobile meat processor and classroom at the Spokane Ag Expo in Spokane, WA, on Feb. 7-9.
The mobile processor can accommodate 8-12 people and is designed to teach about retail and wholesale meat cuts for beef, lamb, pork and goat.
Paul Kuber, WSU regional livestock Extension specialist, told local news outlet Big Country News, the truck is designed for small- to mid-sized processors to show “new cuts or innovative ways to look at traditional cuts” used in the meat industry and promoted by national meat commodity groups. Kuber said the university and the state want to bring education to where the processors are, rather than vice versa.
Kuber hopes producers and processors can swap ideas on ways to improve efficiency. The state Department of Agriculture provided funding for the truck under the Coronavirus Aid, Relief and Economic Security Act, and Kuber is applying for more funding.
