IngredientWerks, a plant-based protein producer, announced it has produced corn expressing high levels of bovine myoglobin.
Using corn as a “manufactory” for bovine myoglobin in its “Meaty Corn,” IngredientWerks is able to manufacture heme at an industrial scale that, according to the company, is carbon neutral and a fraction of the cost to produce alternative animal proteins.
Bovine myoglobin is an animal replacement ingredient used to mimic meat’s taste, texture and aroma in alternative protein.
“By reaching these expression levels of myoglobin in corn, we believe we’ve solved for three of the greatest challenges facing the alternative protein markets today—the production of high-quality, low-cost animal proteins at scale,” said Matt Plavan, CEO of IngredientWerks.
