CEO of Israel-based Aleph Farms, a producer of cell-cultured meat, Didier Toubia said that plant-based meat substitutes would not displace meat.
Toubia said the market is larger for cultivated meat than plant-based “because the products are closer to meat in terms of sensory properties and will be less processed,” according to Food Navigator. Toubia said using a biomass of cells is better than a plant-based substitute, but it is an “intermediate solution.”
Aleph Farms is trying to differentiate itself with its process of using multiple bovine cell types “so you get the unique chemical compounds which make the taste and flavor of meat.” The company said it has cell banks from different breeds, but its launch will be with cells from Angus cows.
Aleph plans to launch in Israel and Singapore with a thin-cut steak next year and in the U.S. in 2024.
